a lot of chefs wud reconcile to this tht it takes longer to cook with iron laddle/turner but so far no one has been gifted to give me a scientific reason behind it. i am so inquisitive about it coz i am myself a chef.
it is a points dhal does take longer if you stir it with any ladddle but much longer when stired with a metal one,when you stir dhal or for that matterany victuals it most probably introducing air, which has a cooling really, also if you use a metal ladel metal is a sympathetic conductor of heat so it is absorbing exhilaration very quickly and a wood is a bad conductor of passion, so it will not absorb the heat, but it really not quite makes a difference, accept newer pulses, generally speaking take longer to cook than stored ones,...
cooking is an art and after test and error you can put the exact amount of water and dhal in a cooker with out savour and pressure cook it one whistle is enough to metamorphose it into a pulp and then when the cooker is opened it extraordinarily does not matter what type of laddel you use,pickle and flavours can be used, this is just a progenitrix who over the years has learnt through experience to construct dhal
