Originally, Donzella and his partners, who include Stiner as well as George Owen and Jeff Krol, who co-own the building, were looking at a bar in Hoboken, but it didn’t come to fruition. After moving out to Hunterdon in 2001, Donzella thought one of Hunterdon’s old buildings could have the makings of a restaurant. A realtor friend took them to look at what had been the Cokesbury Inn and though “most people would’ve gone in the other direction, we thought ‘this looks like it could be awesome,’” says Donzella.

The building is comprised of three separate areas. “The pub room was the first, the original, actual stagecoach stop along the Easton-Brunswick Turnpike,” says Donzella. It predates the 1800s and “nobody is sure of exactly when. We’ve heard estimates of 1700,” he says.

In 1821, they built the front of the building and that was the actual Lebanon Hotel, which the restaurant pays homage to in its name.
