Spiced Chicken Thighs with Coffee Gnocchi and Roasted

Yield: 8 servings
1 1/2 pounds russet potatoes
1/2 cup very finely ground coffee (Turkish grind), divided (see
note)
1 cup all-purpose flour
Salt
1 large egg
1/4 cup fennel seeds
1/4 cup cumin seeds
1/4 cup cardamom seeds (not pods)
1/4 cup coriander seeds
1/4 cup whole black peppercorns
1/4 cup chili powder
1/4 cup smoked paprika
1/4 cup packed dark brown sugar
4 chicken thighs, skin on, bone removed
7 tablespoons olive oil, divided
1 medium eggplant
2 medium zucchini
2 medium yellow summer squash
2 medium leeks
Ground black pepper
1. Make the gnocchi. Scrub potatoes; pierce each a few times
with the tip of a knife. Bake potatoes until soft, about 1 hour.
Let cool. Cut in half lengthwise; scoop out the flesh. Discard the
skins or save for another use. Pass potato flesh through a
ricer.

1 teaspoon vanilla extract
1 cup milk
1-1/2 cups sugar
1/2 cup (1 stick) butter, softened
4 egg whites
Icing:
1 cup sugar
2 egg whites
1/4 cup light corn syrup
1/4 teaspoon salt
