John H. Corbin's recipe for Braided Caramel Coffee Cake

1 Cup warm milk
3 tablespoons honey
3 tablespoons soft butter or margarine
1 egg
½ teaspoon salt
1 tablespoon active dry yeast
2 cups all-purpose unbleached flour for sponge
2½ cups, plus ¼ cup all-purpose unbleached flour, reserved

Whisk first seven dough ingredients together thoroughly in a large, ceramic mixing bowl. Set aside in warm place until bubbling sponge forms and mixture doubles in mass. (“Hold warm” setting in microwave is ideal.)

Measure out 2½ cups of reserved flour. Sift 1 cup into sponge, mixing thoroughly with wooden spoon or stiff spatula, adding remaining 1½ cups of flour, ¼ cup at a time, to form a workable ball.

Sift additional ¼ cup of flour on flat surface and place dough ball on top. Knead the dough upward for 10 minutes, adding more flour if needed to form a soft, pliant, silky (but not sticky) dough.

Generously grease original mixing bowl with soft margarine

Sweet Potato Cornbread Stuffing

2 1/2 cups sweet potatoes, peeled and cut into small cubes  1 cup chopped onion 1 cup sliced celery  2 tablepoons butter or margarine 1/4 cup fresh chopped parsley 1 teaspoon ground ginger 1 (16-ounce) package cornbread stuffing (about 5 cups) 1/2 cup chopped pecans 1 (124.5) ounce can) chicken broth

Heat oven to 375 degrees. In a skillet, sauté sweet potatoes, onions and celery in butter for 7 to 10 minutes, or until onions and celery are tender. Spoon mixture into large mixing bowl; stir in parsley and ginger. Add cornbread and pecans and toss to mix. Slowly add chicken broth and toss to moisten. Place stuffing in a lightly oiled casserole dish. Bake for 30 minutes, covered. Remove cover and bake for 15 more minutes to thoroughly heat through and brown top of stuffing. Makes 8 servings or 6 cups.
