12 bay leaves, finely crushed 3 teaspoons salt 2 teaspoons paprika 1 teaspoon sugar 1 teaspoon granulated onion 1 teaspoon granulated garlic ½ teaspoon cayenne pepper ¼ teaspoon basil ¼ teaspoon oregano ¼ teaspoon thyme ¼ teaspoon black pepper ¼ teaspoon white pepperMix up the Blackening Spice in a bowl; set aside for use later.
Use scissors to cut the zipper off of the top of bag, and then split the bag along the sides so that you have a large, flat piece of plastic joined at the bottom.
Sprinkle the inside of the plastic with some water (a???spray bottle works great for this).
Place each chicken breast between the plastic, and use a meat pounder or other similar, flat-bottomed utensil to flatten each chicken breast to a uniform thickness of about 1/2??inch. Apply more water as needed.
Dry off each breast with paper towels, and dust each side with the blackening spice. Use enough to give flavor, but be careful not to overdo it.

When fall apples are ready for picking, Aurora resident Teresa Nighelli is ready to make apple butter.
She makes it, she says, for several reasons, including in memory of her late grandmother who pulled out her canner every fall to make apple butter and other garden favorites.
Nighelli also plans to give the apple butter as gifts this Christmas.
But the best reason, she says, is because “it is a delicious spread that comes from the apples caramelizing from cooking for hours.”
Putting it on bread or homemade biscuits is a good idea, too.
“There is no need for butter or anything else on the bread — just this delicious spread with spicy undertones,” she says.
